Key to cooking with pumpkins

Autumn is ripe with vibrant colors and scenery. One of the more vivid sights this time of year are the bright, orange pumpkins that adorn walkways and front porches of homes and businesses. Not only are pumpkins ideal for decorating, but they’re also great to eat.Some people who plan to carve jack-o-lanterns mistakenly believe the same type of pumpkin can be used in their favorite recipes. But what carving pumpkins have in visual flair, they usually lack in flavor and substance. Instead, would-be pumpkin cookers should look to other varieties if they plan to serve pumpkin on the menu. Pumpkins are available from September through December, but they peak in October. Many smaller pumpkins are better and sweeter for cooking. Mini pumpkins, sugar, cheese and pie pumpkins are varieties commonly used in recipes. The big jack-o-lantern pumpkins have stringy, watery flesh and will provide little to no pulp for cooking. Select a pumpkin as you would any other type of squash. Look for a firm pumpkin with no bruises or soft spots. The pumpkin also should have a deep orange color. Store pumpkins in a cool, dark area until ready for use to prolong freshness. Wash the exterior of the pumpkin in cool water before cutting to remove any dirt and bacteria on the surface of the pumpkin so it won’t be transferred to the pulp of the pumpkin. Slice the pumpkin in half and remove the seeds and any stringy material. Rinse and save the seeds for planting or roasting. Put the pumpkin pieces in the microwave to cook or you can steam or bake them until the pulp is soft and the pumpkin falls off of the skin. Cool the pumpkins, then puree the pulp until it’s smooth. You may want to strain the pureed pumpkin with a cheese cloth to remove any excess water before using in a pie recipe. Baked breads may benefit from the extra moisture.Pumpkins are a great source of dietary fiber, vitamin A, vitamin C, riboflavin, potassium, copper, manganese, vitamin E, thiamin, niacin, vitamin B6, folate, iron, calcium, magnesium and phosphorus. They’re also low in fat and calories. Pumpkin puree can replace the oil in some baking recipes, much as you would use applesauce.

The Fan Dance

The Fan Dance, like the name suggests, uses beautiful fans to tell a story. The fans usually represent things like a blossoming flower, rippling water, birds or butterflies. The fans are usually quite large and are decorated with bright colors and patterns. Like most cultures, Korea has many kinds of traditional dances — and they all have different meanings. For most of these dances, the performers wear bulky dresses with full sleeves. This helps them to portray things like flowers and birds that are often part of the dance. Korean Folk Dances portray everyday life. These dances are very expressive and show a lot of emotion. They are very free flowing. One popular folk dance is the Farmer’s Dance. It was originally used to entertain farmers and other working-class people. The music has some complicated rhythms to it, making it a quick paced and high-spirited dance. The Kanggang-Suwollae is a beautiful dance celebrating the role of women when they helped protect the country from invasion. In this dance, young women in the village gather in open fields where they sing and dance under the light of the full moon. Changgochum, also called the Hour-Glass Drum Dance, is usually a solo performance. The dancer includes skips, jumps, quick turns and fast steps in the routine — all while playing the drum. A similar drum dance called the Five Drum Dance, has drummers beating different but complementary beats. The dance usually has five drummers, but there can be as few as three and as many as nine drums in this dance.

It’s National Bullying Prevention Month

As the kids came into class, Ms. Gilmour greeted each with a high-five and she said, “Stop Bullying!” They were all surprised at first, but then they all started high fiving each other and repeating, “Stop Bullying!” Ms. Gilmour then asked them, “What is important about this month?” Everyone shouted, “Halloween!” Ms. Gilmour laughed, “That’s right, but what else is important about this month?” Rudy looked at the other blank faces and said, “I know, it’s Bullying Prevention Month, right?” Ms. Gilmour told Rudy he got it right. Nicole then added, “I remember last year we talked about how Bullying Prevention Month should be Bullying Prevention Year.” The kids all agreed that was a good idea, since bullying doesn’t stop on Oct. 31. “Now that you’re back in school, where are you seeing bullying at your school?” Ms. Gilmour asked. All hands went up. Carmen said, “I see it on my bus.” Stephen said, “Kids are bullying in my classroom, and they find a way to do it so the teacher doesn’t see it.” Truman the Dragon then said, “I see bullying in the cafeteria where some kids won’t let others sit with them, or make fun of the way some kids eat.” Rudy said, “That’s not kind or cool.” Carmen added, “That’s just mean and rude.” Ms. Gilmour asked where else they saw bullying. Nicole said, “I see kids being bullied in the locker room or in gym class for how they look, or even for how they play a game.” Stephen then said, “That happens on the ball fields too, both during school and after school at practices and games.” “What do you think about bullying on the Internet? Is that part of school bullying?” asked Ms. Gilmour. Nicole was first to answer, “Yes, because it’s the kids from school who are bullying other kids online. We need to do something to stop all this bullying!” Ms. Gilmour then asked Carmen, “You said you see bullying on your bus. What can kids do to stop that kind of bullying?” Tanner jumped in with, “Show kindness to everyone; no teasing or picking on anyone, especially younger kids.” Rudy added, “Be a friend to younger kids, and report older kids who are bullying to the driver or aide.” Nicole said, “We have to let kids know that reporting bullying isn’t tattling, especially if someone is getting hurt.” Truman the Dragon then said, “I can stop bullying by just giving the kids who bully a look. But not everyone can do that. We have to get our friends together and tell the bully to stop.” All the kids pretended to be shaking in fear of Truman. Carmen added, “We have to all follow the rules on the bus, like staying seated and keeping our hands to ourselves. Let’s all be Bus Bully Busters!” “Great idea,” said Ms. Gilmour. “We still have many places where bullying is happening to talk about. United Nations

How many countries do you think there are in the world? That question might be harder to answer than you would expect. The United Nations is an organization made up of countries from around the world. These countries work together to maintain peace, promote sustainable development, protect human rights, uphold international law and deliver humanitarian aid to people in need. Depending on who is counting and which definition you are using, there are between 193 and 209 countries in the world. Most of them are members of the United Nations, but not all of them. Part of that is because there are so many definitions of what a country is. Here’s how that all works: According to the U.N., there are 195 Sovereign States. These are countries that have clearly defined borders and independent governments. Of the 195 countries, 193 of them are members of the United Nations. The other two are called Observer States. They are Vatican City and Palestine. There are six other countries that are not members of the U.N. but are recognized by at least one country that is a U.N. member. These countries are Taiwan, Western Sahara, Kosovo, South Ossetia, Abkhazia and Northern Cyprus. All six of these are claimed by other countries but aren’t controlled by them. For example China claims Taiwan as a territory. When it comes to the Olympics, there are 206 nations that compete. Countries don’t have to be independent nations to compete in the Olympics so the list includes some dependent territories — many of these include U.S. territories like Puerto Rico and and U.K. territories like Bermuda. All of the U.N. member countries are represented in the Olympics. Soccer fans will tell you that there are 209 FIFA countries that are able to compete in the league though only a few get to compete for the World Cup. Not all U.N. members have teams that compete in the FIFA league but 186 of them do. Even more interesting, when it comes to the Internet, there are more than 249 country codes. That is because the codes are used for countries as well as nearly-independent states, overseas territories, uninhabited islands and even Antarctica. Come Out and Play – Yut-Nori

Yut-Nori is a traditional Korean board game that has been popular for thousands of years. Sometimes it is also called nyout or yoot. It is traditional to play the game during Korean New Year. It is so old that no one is really sure where it originated. Years ago, the game was also used as fortune telling in rural mountain areas and small farming villages. Modern Yut-Nori is only used as a fun way to spend time with friends and family — especially around holidays. The game seems simple at first, but a lot of strategy is involved. Full boards can be purchased at Korean markets or online, but here is how to make and play a more simplified version. The game is often played by two people, but traditional games have a lot of crowd participation. Groups of people will gather around the players and cheer and joke as the game progresses. You don’t have to be actually playing to enjoy the game. Here is how to play: • First you’ll need a piece of cardboard or poster board, four craft sticks, stickers, markers and a few game pieces • You need a game piece for each player, it is usually played by two • The larger the board the longer the game will be, it can be the shape of either a square or circle. • Place the stickers on the board around the edges. You can also place the stickers in diagonal lines from corner to corner. Those are short cuts across the board. • Mark one sticker as the starting place, it should be different from all of the other stickers • Decorate one side of the craft sticks with the markers • Each player takes turns tossing the sticks into the air in order to move the game pieces • For every side of the sticks that lands with decorations up, the player moves their game piece that many spaces • If all of the sticks land with the blank sides up then the player should move five spaces. • The first player to go all the way around the board wins the game • If a game piece lands where another’s player is resting then the second player’s piece must return to the start of the board.

Around the world – October 2015

National Foundation Day Gaecheonjeol is a public holiday in South Korea on Oct. 3. Also known by the English name National Foundation Day, this holiday celebrates the formation of the first Korean state of Gojoseon in 2333 BC. This date has traditionally been regarded as the date for the founding of the Korean nation. Korean mythology holds that Hwanung descended from heaven to live with mankind. According to the legend, in his kingdom were a bear and a tiger who wished to become human. Hwanung told them that if they remained in a cave for 100 days eating nothing but mugwort and garlic, they would become like people. The tiger got bored, but the bear lasted it out and became a beautiful woman. She and Hwanung bore a son called Tangun Wanggom, meaning Sandalwood King. When he grew up, he built his own city at the present site of P’yongyang (now the capital of North Korea) and called his new kingdom Choson, meaning “morning freshness” or “morning calm.” On Oct. 9, Korean’s celebrate Hangul Day, which is the day their alphabet was established. The Korean alphabet, known as Hangul in South Korea and elsewhere and as Chosŏn’gŭl in North Korea and China, is the alphabet that has been used to write the Korean language since the 15th century. In its classical and modern forms, the alphabet has 24 consonant and vowel letters. However, instead of being written sequentially like the letters of the Latin alphabet, Hangul letters are grouped into blocks. Halloween It wouldn’t be October if we didn’t mention Halloween. Halloween is a time of celebration and superstition. It is thought to have originated with the ancient Celtic festival of Samhain, when people would light bonfires and wear costumes to ward off roaming ghosts. In the eighth century, Pope Gregory III designated November 1 as a time to honor all saints and martyrs; the holiday, All Saints’ Day, incorporated some of the traditions of Samhain. The evening before was known as All Hallows’ Eve and later Halloween. Over time, Halloween evolved into a secular, community-based event characterized by child-friendly activities such as trick-or-treating. In a number of countries around the world, as the days grow shorter and the nights get colder, people continue to usher in the winter season with gatherings, costumes and sweet treats.

Geodesist

Please tell our readers a little bit about yourself. My name is Dr. Theresa Damiani. I grew up in Rochester, New York, and spent a lot of time outdoors when I was a kid. My family often went camping and hiking. One of our favorite places was New York’s Watkins Glen State Park, which has beautiful gorges and waterfalls. I was always picking up cool-looking rocks there and bringing them home! Later, my parents signed me up for a summer class about fossils at our local science center. The day we went out collecting fossils is the day I fell in love with geology. In high school, my favorite classes were Earth Science, Physics, Math and English. I went to college at the Pennsylvania State University and majored in geosciences. My first scientific jobs were there at the university, where I worked in professors’ laboratories helping with research projects. I loved it! At Penn State I decided I wanted to be a geophysicist – someone who studies the earth by using instruments to make measurements, rather than collecting rock samples. Geophysicists study earthquakes, volcanoes, mountain ranges and many other interesting features of our planet. To become a professional geophysicist, I moved to Texas and got a doctorate degree from the University of Texas in Austin. While there, I studied Antarctica (that’s the frozen continent at the South Pole, where penguins live). In fact, I was lucky enough to go on an expedition to Antarctica! I lived there and did research for four months. We flew an airplane filled with scientific instruments over a remote part of the Antarctic Ice Sheet that had never been surveyed before. We measured how much ice was there and what the rocks below the ice were made of. After I finished graduate school, I moved to Washington, D.C. to work for the U.S. federal government. I have worked for the National Oceanic and Atmospheric Administration (NOAA) for seven years now as a geodesist. My work now is similar to what I did in Antarctica, but this time we’re making measurements from airplanes all over the United States. In fact, it will take 15 years to make all of our measurements because the U.S. is so big! We are half-way done. What is a geodesist? A geodesist is someone who studies and maps the size, shape and major properties of the earth. They also track how its shape and properties change over time. In other words, they keep track of the locations of points on the earth’s surface and how those points move. The earth’s surface is constantly changing! The tectonic plates move, slowly rearranging the surface of the planet. And the ground sinks and swells both naturally and because people pump water, oil or other resources out of the ground. Geodesists also help people figure out where they are on the planet so they can make sure they do not build their houses in flood zones and they can travel safely – whether on foot, by car, by plane, by train or by boat. What does it take to be a geodesist? An aspiring geodesist first needs to be interested and do well in classes related to the physical sciences, math and/or engineering. In college, most geodesists major in areas like geology, physics, math, geomatics, surveying engineering or aerospace engineering. They then switch to graduate degrees (Master’s or Ph.D.) in geodesy or geophysics after they finish their undergraduate degree. When/How did you know you wanted to be a geodesist? It’s funny, but I didn’t know what geodesists did until I was almost finished with my schooling! It’s a field of study that is often discovered while you’re in college studying similar subjects. I knew I wanted to be a geodesist because the questions we ask and seek to answer about the earth are such big, challenging and interesting questions. Also, our work is critical to commerce, construction and other things humans depend on. It’s rewarding to be able to contribute to society in that way. Why is this work important/how does it apply to everyday life for most people? Geodesy is very important. You use products created by geodesists every day, though most of the time you don’t know it. Geodesists provide coordinates (latitude, longitude, height and shoreline) to map-makers for locations so that maps are accurate. Those maps are used by you when driving and hiking, and also by people doing construction projects and predicting flooding too. Geodesists help figure out which way water flows and make estimates of average sea level around the U.S. Geodesists were also some of the first people to use GPS (the Global Positioning System) for finding accurate positions of things. Now, you use GPS in cell phones and cars all the time to tell you where you are. What is a typical day like for you? Most days I work in an office, at a federal building. I work on teams and by myself. My work involves finding patterns in data on a computer, reading about other people’s work, writing computer code and reports, and figuring out how to answer scientific questions (called hypotheses). I often work on many different projects at once. A few times each year I travel to scientific conferences to give presentations about my work. These conferences are held all over the world. I’ve been to Tasmania, Argentina, Italy, Austria, and many places in the U.S. for conferences. Sometimes I spend a few weeks at a time “in the field.” That means going to different places in the U.S. collecting data from an airplane. Being “in the field” is intense, hard work and very rewarding when everything runs smoothly. What do you most enjoy about your work? Yeti Crabs

Deep in the oceans, around 7,500 feet deep, the yeti crab lives between two extremes: freezing cold and boiling hot — all while withstanding crushing amounts of pressure from the waters above. The sun never reaches that deep in the ocean, so it is incredibly dark and freezing cold. To survive, hundreds of yeti crabs gather around hydrothermal vents, which are cracks in the seafloor that allow molten rock from beneath the earth’s crust to emerge. The vents heat the water to as hot as 700°F, but the water doesn’t boil because of the huge amounts of pressure. The vents also spew out dissolved metals and chemicals from the earth’s molten interior. For many animals this mixture of pressure, heat, cold and chemicals would mean instant death, but for the yeti crab, it is a cozy home — as long as they don’t get too close to or too far from the vent! Finding life in these incredible environments makes scientists wonder about what could live on other worlds. • Yeti crabs are completely white and blind because they live in complete darkness at the bottom of the ocean. • They were first found around vents in the South Pacific. • In 2006, a species was found around Costa Rica. • They were later found around vents in the Southern Ocean around Antarctica. • They are called yeti crabs because their big white arms are covered in bristles called setae that look like white hairs. • These hairs allow the crabs to grow bacteria, which is the crab’s main food. • They have thick bodies and thin spiny legs. • The spiny legs allow them to grip onto the vents. • The vents are very crowded, especially in Antarctica where up to 700 crabs have been recorded per square meter. • They range from under an inch to 6 inches long. • They are often referred to as “furry lobsters.” • They wave their claws, potentially to help nutrients from the vents feed their bacteria. • Males are larger than females.

Iceland

Iceland is a large island nation in the northern Atlantic Ocean. It was originally settled by the Norse (vikings) in the 9th century. Irish monks came in the previous century, but did not stay. The vikings moved to Iceland because their home of Norway didn’t have enough farmland to support the population and this caused wars. Iceland was completely empty so these first inhabitants could live on whatever land they wanted. The current republic was founded in 1944 and it is governed by a parliament and a president. • The capital is Reykjavik, which is the world’s northernmost capital city. • The population is 317,000. • The money is called the Krona. • School is free for everyone in Iceland — all the way through college. • Foxes are the only mammal native to Iceland. • Iceland was ruled by Denmark for 500 years. • The highest point is 2,110 meters and it is called Hvannadalshnukur. • Only 1 percent of the land is farmable. • The Vatnajokull glacier is the largest glacier in Europe. • In June and July the sun never sets. • Handball is one of the most popular sports. • Skyr is a very popular snack. It is like yogurt, but it is actually cheese. • 11 percent of the country is covered in ice. • It is common to believe in elves and trolls. • The three colors of the flag represent the elements of the nation. Red is volcanic fire, white is for snow, blue is the ocean. One of the most unique aspects of Iceland is its volcanic activity, which is created by the Earth’s tectonic plates colliding near the island. There are around 200 volcanoes on the island. But even more amazing is the geothermal energy that the volcanic activity provides. Geothermal energy is created when the hot magma from the many volcanoes on the island heat the underground water reservoirs to high temperatures and create huge amounts of steam. Power plants, homes and restaurants then use the energy from the steam to create power and often to cook. Eighty-five percent of Iceland’s energy is produced from geothermal energy, which is a renewable resource and good for the environment. When the heated water is on the surface of the planet, it creates a hot spring, which people often bath in because the minerals in the warm water are thought to be great for health.
