October is Vegetarian Month, so here is a healthful veggie recipe for you to try!


Very Veggie Wrap



WHAT YOU NEED:


1 flour tortilla


1 tablespoon cream cheese spread


1 large lettuce leaf


3 baby carrots


1/4 cup broccoli florets


1/4 cup shredded cheddar cheese


1 tablespoon ranch salad dressing


DIRECTIONS:


1. Place the tortilla on a cutting board. Spread the tortilla evenly with cream cheese using a spreader or butter knife. Place the lettuce leaf on top and press it down gently.


2. Place the carrots in a grater and grate them over the lettuce.


3. With adult help: Chop the broccoli using a food chopper or a knife and sprinkle it over the carrots. Sprinkle the cheese over the broccoli, and then drizzle the salad dressing over the top.


4. To roll up the tortilla, begin at one side and roll up the tortilla tightly. Enjoy!


Makes 1 wrap.


Helpful Hint: If you would like to pack a wrap for your school lunch, roll it tightly in a piece of plastic wrap, and then tuck it into an insulated lunch bag to keep it cold.
